Whole Wheat Coconut Oil Waffles

Ingredients:

  • 1-1/2 c whole wheat flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1-1/2 c milk
  • 1/3 c coconut oil, melted
  • 1 egg
  • 1/2 tsp vanilla extract

Optional additions or toppings:

  • 1/2 c chopped walnuts
  • 1/2 c blueberries
  • 2 sliced bananas
  • Honey

Method:

Preheat waffle iron (or griddle for pancakes). Sift together flour, baking powder, and salt. In a separate bowl, cream together coconut oil, sugar, egg, and vanilla. Incorporate dry ingredients and add milk, mixing together until no lumps remain. Ladle batter into a waffle iron that has been lightly brushed with oil. Cook 2 to 5 minutes or until desired doneness. Serve warm (with toppings).
Makes about 8 servings.
