Puran Poli

Ingredients:

  • 2 c. chana dal
  • 2 c. sugar
  • 1 c. wheat flour
  • 2 tsp nutmeg
  • 3 tsp cardamom
  • 2 tsp ginger powder
  • 1/8 tsp saffron soaked in 1 tsp milk

Method:

  1. Knead the wheat flour with very little cold water. Keep aside for 1 to 2 hours.
  2. Add salt and oil. Set aside for 1 more hour.
  3. In a cooker, put equal amounts of dal & warm water, saffron & 1-2 tsp of oil. Cook well. Strain out the water.
  4. While still hot, put this in a vessel.
  5. Add the sugar, ginger powder & nutmeg.
  6. Cook for 10-15 minutes or until the paste sticks to the sides of the pan.
  7. Remove. Grind to a fine paste.
  8. Make balls of the dal and flour to a 2:1 ratio (size). Roll out the polis using a little rice flour if necessary.
  9. After heating the pan well, cook them on low fire.
