Pani Puri

Ingredients:

  • 1 c mint leaves
  • ½ c coriander leaves
  • 4 green chillies
  • 3 Tbsp tamarind pulp
  • 3 Tbsp lemon juice
  • 1 Tbsp cumin powder
  • 1 Tbsp coriander powder
  • ½ tsp black pepper
  • 2 tsp black salt
  • ½ tsp dry ginger powder
  • 1 Tbsp brown sugar

Method:

  1. Blend the leaves and chillies in the blender with the pulp and lemon juice.
  2. Add the dry spices and continue blending until a fine paste.
  3. Dilute with icy cold water and serve cold with puris, moong, potato and sev.

Serves 50 puris.
