Babaghanoush

Ingredients:

  • 2 eggplants (medium sized)
  • 1 onion (sliced)
  • 6 garlic pods (sliced)
  • ¼ c sesame seeds (ground) or 2 Tbsp Tahini can be used
  • 1 tsp salt (or to taste)
  • 2-3 Tbsp Oil
  • ½ bunch coriander leaves
  • Few mint leaves (optional)
  • ½ lemon (squeezed)

Method:

  1. Brush the eggplants lightly with oil. Broil them for 8 minutes on each side in the oven.
  2. Remove and cook in microwave oven for 10-15 minutes. Remove and let cool.
  3. Sautè onions and garlic in oil till golden brown.
  4. Grind sesame seeds in grinder to a fine ground.
  5. Cut eggplants in half; spoon out the pulp from the skin and discard skin.
  6. Toss all ingredients in food processor and purée till a slightly lumpy blend remains.
  7. Serve cold with pita bread cut into triangles and baked in oven for 10 minutes.
    Makes an excellent appetizer.
