Babaghanoush

Ingredients:
- 2 eggplants (medium sized)
- 1 onion (sliced)
- 6 garlic pods (sliced)
- ¼ c sesame seeds (ground) or 2 Tbsp Tahini can be used
- 1 tsp salt (or to taste)
- 2-3 Tbsp Oil
- ½ bunch coriander leaves
- Few mint leaves (optional)
- ½ lemon (squeezed)
Method:
- Brush the eggplants lightly with oil. Broil them for 8 minutes on each side in the oven.
- Remove and cook in microwave oven for 10-15 minutes. Remove and let cool.
- Sautè onions and garlic in oil till golden brown.
- Grind sesame seeds in grinder to a fine ground.
- Cut eggplants in half; spoon out the pulp from the skin and discard skin.
- Toss all ingredients in food processor and purée till a slightly lumpy blend remains.
- Serve cold with pita bread cut into triangles and baked in oven for 10 minutes.
Makes an excellent appetizer.
