Baked Cauliflower and Potatoes

Ingredients:
- 1 medium cauliflower
- 1 large onion
- 2 potatoes
- 1-½ – 2 tsp salt
- ½ tsp turmeric
- ½ tsp chilli powder
- 1-½ tsp amchoor
- 1 tsp coriander powder
- 1 tsp oil
- 1 Tbsp whole cumin seeds
Method:
- Chop vegetables into medium and equal chunks.
- Spread 2 Tbsp oil in bottom of 13”x9” pan.
- Sprinkle all the spices on top of the vegetables evenly and smear with hand.
- In a small butter pan heat 1 tsp oil and roast the whole cumin seeds. Spread on top of the vegetable mixture.
- Bake at 350° F, uncovered for 30 minutes.
- Test potato for doneness. If not yet done, continue baking for another 15 – 20 minutes (optional: loosely cover with foil with slits in it to retain some moisture).
Serve warm.
