Baked Cauliflower and Potatoes

Ingredients:

  • 1 medium cauliflower
  • 1 large onion
  • 2 potatoes
  • 1-½ – 2 tsp salt
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • 1-½ tsp amchoor
  • 1 tsp coriander powder
  • 1 tsp oil
  • 1 Tbsp whole cumin seeds

Method:

  1. Chop vegetables into medium and equal chunks.
  2. Spread 2 Tbsp oil in bottom of 13”x9” pan.
  3. Sprinkle all the spices on top of the vegetables evenly and smear with hand.
  4. In a small butter pan heat 1 tsp oil and roast the whole cumin seeds. Spread on top of the vegetable mixture.
  5. Bake at 350° F, uncovered for 30 minutes.
  6. Test potato for doneness. If not yet done, continue baking for another 15 – 20 minutes (optional: loosely cover with foil with slits in it to retain some moisture).

Serve warm.
