Turkey Kababs in Pita Pockets

Ingredients:

Kababs:

  • 1 lb Ground Turkey
  • 1/4 c fried Onions (like for Biryani) …available @ desi groc stores
  • 1 tsp Salt
  • 2 Tbsp fresh Garlic (shredded)
  • 2 Tbsp fresh Ginger (shredded)
  • 1/4 tsp Red Chili powder
  • 1/4 tsp Black Pepper powder
  • 3-4 Tbsp Coriander powder
  • 1-2 Green Chillies (chopped or shredded)
  • 8-10 leaves fresh Mint leaves (chopped fine)
  • handful Cilantro leaves (chopped fine)
  • 1 tsp Garam Masala
  • approx 1/8 tsp crushed Saffron (optional)
  • 1 tsp Tandoori masala (pref powder but paste is fine too)
  • 2-3 Tbsp Besan (esp if the Turkey is extra lean)
    (optional).. tho’ for your first attempt at these I tell my friends that it may be a good idea to add this just till you get the hang of making them w/o breaking them esp w/ so many ingredients weighing them when you make w/ the Turkey.

Pita Pocket filling salad:

  • 1 Red Onion (sliced/chopped)
  • 3 Tomatoes (cut chunky)
  • 1 Cucumber (halved lengthwise and then sliced sideways into half circle slices)
  • 1/2 cup Non-Fat Yogurt
  • 2 Tbsp Ranch dressing
  • Crushed Black Pepper
  • Fresh Mint (chopped fine)
  • 1/4 tsp shredded Garlic (3-4 cloves)

Mix the above ingredients and fill in the pita just before serving.
IMP: do NOT add any salt to the salad filling.

Method:

  1. Form into any size/shape Kababs and grill them on the barbecue grill till well done
    HINT: when grilling do not turn more than once on the grill to avoid breaking them. Also, do not press down on them when they are cooking on the grill. Be very gentle w/ them even when removing when done.

OR

  1. Bake on a baking tray in preheated oven @ 350 F till cooked well on the inside. Approx 20-25 mins depending on your oven.
    You can break one and check to see if it’s cooked on the inside.
  2. Add kababs to the filling in the Pita.
