Baked Cauliflower

Ingredients:

  • 1 head Cauliflower
  • Fried onion
  • Cashews halved + ground
  • Ginger, garlic
  • Yogurt
  • Green peas
  • Raisins
  • Garam masala
  • Cardamom, whole
  • Salt to taste

Method:

  1. Chop cauliflower into large florets. Saute briskly till golden brown.
  2. Arrange in a flat pan in one or two layers.
  3. Roast whole cardamom, some raisins and half the cashews. Sprinkle on top of the cauliflower. Add peas.
  4. Roast remaining cashews, onions, garam masala, garlic and ginger and grind to a paste. Add salt.
  5. Generously mix yogurt into the mix to make a sauce. Saute well.
  6. Pour over cauliflower and bake in microwave or oven until heated through.
