Dhokla

Ingredients:

  • 1 c besan (gram flour)
  • 1 Tbsp rava (semolina)
  • 3 tsp sugar
  • 1 tsp salt
  • ½ tsp citric acid
  • 1-½ tsp Eno
  • 1 c water
  • mustard seeds
  • oil
  • green chillies
  • salt & sugar
  • ½ c water

Method:

  1. Mix besan, rava, sugar, salt, citric acid, eno and water. Set aside and let it rise.
  2. Pour into oiled dhokla pans.
  3. Fill large pan with water and let it come to a boil. Insert the dhokla pans and let cook for 15-18 minutes on med – high heat with lid closed.
  4. Remove. Cool. Cut into squares.
  5. Season hot oil with mustard seeds and green chillies. Cool.
  6. Add salt, sugar and ½ c water. Pour seasoning onto cooled dhokla squares. It will absorb the remaining water and keep it moist.

Serve warm or cold.
