Dhokla

Ingredients:
- 1 c besan (gram flour)
- 1 Tbsp rava (semolina)
- 3 tsp sugar
- 1 tsp salt
- ½ tsp citric acid
- 1-½ tsp Eno
- 1 c water
- mustard seeds
- oil
- green chillies
- salt & sugar
- ½ c water
Method:
- Mix besan, rava, sugar, salt, citric acid, eno and water. Set aside and let it rise.
- Pour into oiled dhokla pans.
- Fill large pan with water and let it come to a boil. Insert the dhokla pans and let cook for 15-18 minutes on med – high heat with lid closed.
- Remove. Cool. Cut into squares.
- Season hot oil with mustard seeds and green chillies. Cool.
- Add salt, sugar and ½ c water. Pour seasoning onto cooled dhokla squares. It will absorb the remaining water and keep it moist.
Serve warm or cold.
