Broccoli & Corn Casserole

Ingredients:

  • 1 pkg. Chopped broccoli
  • 1 can cream of corn
  • ½ c saltine crackers (crumbled)
  • ½ stick (4 Tbsp.) melted margarine (reduce to ¼ c preferably)
  • 1 egg (beaten)
  • ½ c medium onion (diced)
  • ½ tsp. salt, and dash of pepper

For the topping:

  • ½ c crumbled saltine crackers
  • ¼ stick (2 Tbsp.) of melted margarine

Method:

  1. Cook broccoli according to instructions on packet. Mix well with the other ingredients and pour in casserole dish.
  2. Sprinkle the topping mix lightly over the broccoli and corn mixture.
  3. Preheat oven to 350 F.
  4. Bake casserole uncovered @ 350 F for 40 minutes or until golden brown.
