Broccoli & Corn Casserole

Ingredients:
- 1 pkg. Chopped broccoli
- 1 can cream of corn
- ½ c saltine crackers (crumbled)
- ½ stick (4 Tbsp.) melted margarine (reduce to ¼ c preferably)
- 1 egg (beaten)
- ½ c medium onion (diced)
- ½ tsp. salt, and dash of pepper
For the topping:
- ½ c crumbled saltine crackers
- ¼ stick (2 Tbsp.) of melted margarine
Method:
- Cook broccoli according to instructions on packet. Mix well with the other ingredients and pour in casserole dish.
- Sprinkle the topping mix lightly over the broccoli and corn mixture.
- Preheat oven to 350 F.
- Bake casserole uncovered @ 350 F for 40 minutes or until golden brown.
