Thai Chicken

Ingredients:

  • 1 packet of two boneless chicken breast pieces
  • 1 large / 2 medium Onions
  • 1 can Mushrooms
  • 1 large Eggplant
  • 1 small can Red curry paste (Thai)
  • 1 can Coconut milk (low fat)
  • Tabasco or red chilli sauce to taste
  • Salt to taste
  • 2 Tbsp each garlic and ginger (optional)

Method:

  1. In sesame or olive oil, saute sliced onions in a large pan, until light golden in color.
  2. Add the curry paste and stir. Remove.
  3. Slice rings of eggplant and braise in the pan until partially cooked. Remove.
  4. Slice breast halves into large pieces (if using garlic and ginger, add now) and roast in the pan until fully cooked. Remove.
  5. Cut eggplant into length wise slices, cut the chicken into length wise slices, add mushrooms and toss all ingredients into a larger pot.
  6. Add salt, tabasco and coconut milk.
  7. Simmer till warm. Do not overheat. Serve warm.
