Thai Chicken

Ingredients:
- 1 packet of two boneless chicken breast pieces
- 1 large / 2 medium Onions
- 1 can Mushrooms
- 1 large Eggplant
- 1 small can Red curry paste (Thai)
- 1 can Coconut milk (low fat)
- Tabasco or red chilli sauce to taste
- Salt to taste
- 2 Tbsp each garlic and ginger (optional)
Method:
- In sesame or olive oil, saute sliced onions in a large pan, until light golden in color.
- Add the curry paste and stir. Remove.
- Slice rings of eggplant and braise in the pan until partially cooked. Remove.
- Slice breast halves into large pieces (if using garlic and ginger, add now) and roast in the pan until fully cooked. Remove.
- Cut eggplant into length wise slices, cut the chicken into length wise slices, add mushrooms and toss all ingredients into a larger pot.
- Add salt, tabasco and coconut milk.
- Simmer till warm. Do not overheat. Serve warm.
