Sponge Cake

Recipe by Anar Aji

Ingredients:

  • 4 eggs beaten stiff
  • 3 c all purpose flour
  • 2 c icing sugar or 1 ¾ c granular sugar
  • optional: ½ c orange marmalade for orange cake (Reduce sugar to 1 ½ c)
  • 1 c butter (softened, not melted)
  • ¾ c milk
  • 1 tsp vanilla
  • pinch of soda bicarbonate
  • 1 tsp baking powder

Method:

  1. Preheat oven to 350 F.
  2. Cream butter, sugar, yolks, until smooth and fluffy, with an electric blender.
  3. Beat egg whites separately till stiff peaks form.
  4. Add the dry ingredients, then the beaten egg whites, vanilla and milk.
  5. Pour into greased and floured 9″x13” pan or two round 8” pans.
  6. Bake at 350 F for 40 mins (rectangular pan) or 30-35 mins (round pans).
  7. Test for doneness by pricking with a toothpick.
  8. Remove from oven.
  9. Tastes best when cake is warm and fresh.

If desired icing / frosting, cool completely on wire rack.
