Sponge Cake
Recipe by Anar Aji
Ingredients:
- 4 eggs beaten stiff
- 3 c all purpose flour
- 2 c icing sugar or 1 ¾ c granular sugar
- optional: ½ c orange marmalade for orange cake (Reduce sugar to 1 ½ c)
- 1 c butter (softened, not melted)
- ¾ c milk
- 1 tsp vanilla
- pinch of soda bicarbonate
- 1 tsp baking powder
Method:
- Preheat oven to 350 F.
- Cream butter, sugar, yolks, until smooth and fluffy, with an electric blender.
- Beat egg whites separately till stiff peaks form.
- Add the dry ingredients, then the beaten egg whites, vanilla and milk.
- Pour into greased and floured 9″x13” pan or two round 8” pans.
- Bake at 350 F for 40 mins (rectangular pan) or 30-35 mins (round pans).
- Test for doneness by pricking with a toothpick.
- Remove from oven.
- Tastes best when cake is warm and fresh.
If desired icing / frosting, cool completely on wire rack.
