Caramel Custard

Ingredients:

  • 1 pint Milk [whole or Half & Half]
  • 4 Eggs
  • 1/2 c Sugar
  • 1 tsp Vanilla esssence
  • Caramel sugar (sugar 1-2 oz. & water 1-2 oz.)

Method:

  1. Beat eggs thoroughly.
  2. Add sugar and beat until light and fluffy.
  3. Add milk and vanilla. Set aside.
  4. Prepare caramel by heating sugar and water mixture in a saucepan. Do not stir. Let it darken to a light brown. [If too dark it will taste bitter.]
  5. Quickly, pour into a rectangular baking dish. Swirl it to coat sides of the pan. Set aside to set.
  6. Pour the milk mixture into the baking dish. Place the baking dish in a larger roasting pan.
  7. Gently pour water into the pan to cover the bottom. Place both in the oven.
  8. Bake at 350 F for 45 min. to 1 hr. Test for doneness. Knife should come out clean. If the custard starts browning from the top, cover lightly with foil.
