Caramel Custard

Ingredients:
- 1 pint Milk [whole or Half & Half]
- 4 Eggs
- 1/2 c Sugar
- 1 tsp Vanilla esssence
- Caramel sugar (sugar 1-2 oz. & water 1-2 oz.)
Method:
- Beat eggs thoroughly.
- Add sugar and beat until light and fluffy.
- Add milk and vanilla. Set aside.
- Prepare caramel by heating sugar and water mixture in a saucepan. Do not stir. Let it darken to a light brown. [If too dark it will taste bitter.]
- Quickly, pour into a rectangular baking dish. Swirl it to coat sides of the pan. Set aside to set.
- Pour the milk mixture into the baking dish. Place the baking dish in a larger roasting pan.
- Gently pour water into the pan to cover the bottom. Place both in the oven.
- Bake at 350 F for 45 min. to 1 hr. Test for doneness. Knife should come out clean. If the custard starts browning from the top, cover lightly with foil.
