Carrot Cake

Ingredients:

  • 1 c Wesson oil
  • 2 c sugar
  • 3 eggs well beaten
  • 1 c crushed undrained pineapple
  • 2-½ c grated carrots
  • 2 tsp vanilla
  • 2 c sifted flour
  • 2 tsp baking soda
  • 1 tsp cinnamon powder
  • 1 tsp salt
  • ½ – 1 c flaked coconut
  • 1 c chopped walnuts

Method:

  1. Combine oil, sugar, eggs, pineapple, carrots and vanilla.
  2. Beat at medium speed with a mixer.
  3. Sift in dry ingredients, beat another 2 minutes.
  4. Add coconut and nuts. Mix.
  5. Pour into 2 loaf pans or a bundt pan.
  6. Bake in a preheated oven at 350 F for 45 min. or until tested done.
