Carrot Cake

Ingredients:
- 1 c Wesson oil
- 2 c sugar
- 3 eggs well beaten
- 1 c crushed undrained pineapple
- 2-½ c grated carrots
- 2 tsp vanilla
- 2 c sifted flour
- 2 tsp baking soda
- 1 tsp cinnamon powder
- 1 tsp salt
- ½ – 1 c flaked coconut
- 1 c chopped walnuts
Method:
- Combine oil, sugar, eggs, pineapple, carrots and vanilla.
- Beat at medium speed with a mixer.
- Sift in dry ingredients, beat another 2 minutes.
- Add coconut and nuts. Mix.
- Pour into 2 loaf pans or a bundt pan.
- Bake in a preheated oven at 350 F for 45 min. or until tested done.
