Pumpkin Bread

Ingredients:

  • 1/3 c oil
  • 1 can pumpkin (15-16oz)
  • 3 eggs
  • 2-1/3 c Bisquick
  • 1-1/4 c sugar
  • 2 tsp cinnamon
  • 1/2 c raisins
  • 1/4 – 1/2 c chopped nuts (walnuts)

Method:

  1. Pre-heat oven to 350oF.
  2. Beat the eggs, with a mixer, until light and fluffy.
  3. Add the oil and sugar and beat till stiff.
  4. Add the pumpkin pulp, and beat.
  5. Add the flour and cinnamon, and beat.
  6. Add the nuts and raisins and fold with a spatula.
  7. Line two loaf pans with butter and dust with flour.
  8. Pour the batter into each of the two pans.
  9. Bake at 350 F for 40 – 50 mins.
  10. Check with a knife to test for doneness.
  11. Cool on a wire rack.

Muffins can be made with the same batter. Bake for 40 mins. Makes 20-24 muffins.
