Pumpkin Bread
Ingredients:
- 1/3 c oil
- 1 can pumpkin (15-16oz)
- 3 eggs
- 2-1/3 c Bisquick
- 1-1/4 c sugar
- 2 tsp cinnamon
- 1/2 c raisins
- 1/4 – 1/2 c chopped nuts (walnuts)
Method:
- Pre-heat oven to 350oF.
- Beat the eggs, with a mixer, until light and fluffy.
- Add the oil and sugar and beat till stiff.
- Add the pumpkin pulp, and beat.
- Add the flour and cinnamon, and beat.
- Add the nuts and raisins and fold with a spatula.
- Line two loaf pans with butter and dust with flour.
- Pour the batter into each of the two pans.
- Bake at 350 F for 40 – 50 mins.
- Check with a knife to test for doneness.
- Cool on a wire rack.
Muffins can be made with the same batter. Bake for 40 mins. Makes 20-24 muffins.
