Nankhatai

Ingredients:
- 2 c all purpose flour
- ½ c gram flour [besan]
- ½ c almonds [ground]
- 1 c granulated sugar
- 1 c unsalted butter [2 sticks]
- 1-½ Tbsp nutmeg
- 2 tsp almond essence
- ¼ tsp salt
Method:
- Pre-heat oven to 325 F.
- Beat the sugar and butter, with a fork or mixer, until smooth and stiff.
- Grind the almonds with gram flour into a fine powder.
- Add the gram flour and almond mixture, nutmeg, salt and almond essence. Continue to beat till smooth. Lastly, add the all purpose flour.
- Mix lightly, until loose and crumbly.
- Bind lightly into smooth balls, flatten and make into a cookie shape. Place on ungreased, cookie sheets.
- Bake at 325 F for 15 min. or until the nankhatai look golden.
Caution: may burn easily on the bottom. Monitor the oven closely.
Makes approximately 30 nankhatais.
