Nankhatai

Ingredients:

  • 2 c all purpose flour
  • ½ c gram flour [besan]
  • ½ c almonds [ground]
  • 1 c granulated sugar
  • 1 c unsalted butter [2 sticks]
  • 1-½ Tbsp nutmeg
  • 2 tsp almond essence
  • ¼ tsp salt

Method:

  1. Pre-heat oven to 325 F.
  2. Beat the sugar and butter, with a fork or mixer, until smooth and stiff.
  3. Grind the almonds with gram flour into a fine powder.
  4. Add the gram flour and almond mixture, nutmeg, salt and almond essence. Continue to beat till smooth. Lastly, add the all purpose flour.
  5. Mix lightly, until loose and crumbly.
  6. Bind lightly into smooth balls, flatten and make into a cookie shape. Place on ungreased, cookie sheets.
  7. Bake at 325 F for 15 min. or until the nankhatai look golden.
    Caution: may burn easily on the bottom. Monitor the oven closely.

Makes approximately 30 nankhatais.
