Rose Barfi

Ingredients:
- 15 – 16oz Ricotta cheese
- 1/4 lb butter (1 stick)
- 1 c sugar
- 2 c Carnation milk powder
- 1/4 tsp ground cardamom
- 1/4 c ground pistachios [or ½ c dried rose petals (edible kind!)]
- 2 Tbsp rose essence
- Couple of drops red food coloring [optional]
Method:
- Melt the butter in a flat pan.
- Add Ricotta cheese and fry for 1/2 hour.
- Add sugar and fry for 2-3 minutes.
- Add Carnation milk and fry for 2-3 minutes.
- Add 2 Tbsp rose essence. Add a few drops of red food coloring [optional].
- The mixture should be dry enough to come off the sides of the pan quickly.
- Pour the mixture on a flat tray or plate and press the surface flat.
- Sprinkle the cardamom and pistachios on top.
- Let it cool.
- Cut squares with a clean, sharp knife.
- Remove the barfi squares and store in refrigerator.
