Rose Barfi

Ingredients:

  • 15 – 16oz Ricotta cheese
  • 1/4 lb butter (1 stick)
  • 1 c sugar
  • 2 c Carnation milk powder
  • 1/4 tsp ground cardamom
  • 1/4 c ground pistachios [or ½ c dried rose petals (edible kind!)]
  • 2 Tbsp rose essence
  • Couple of drops red food coloring [optional]

Method:

  1. Melt the butter in a flat pan.
  2. Add Ricotta cheese and fry for 1/2 hour.
  3. Add sugar and fry for 2-3 minutes.
  4. Add Carnation milk and fry for 2-3 minutes.
  5. Add 2 Tbsp rose essence. Add a few drops of red food coloring [optional].
  6. The mixture should be dry enough to come off the sides of the pan quickly.
  7. Pour the mixture on a flat tray or plate and press the surface flat.
  8. Sprinkle the cardamom and pistachios on top.
  9. Let it cool.
  10. Cut squares with a clean, sharp knife.
  11. Remove the barfi squares and store in refrigerator.
